Remove from heat & whisk in Nonfat Skim Milk Powder, Sugar and eCreamery's Vanilla Bean. Let ingredients cool to 40 F. The best way to do this is to cover and refrigerate for a few hours or overnight. Letting the base chill overnight is the best. We call it aging the base. The longer you age the base, the better, up to 48 hours. This is also a good time to put your ice cream bowl in the freezer in case you didn't do that. This way your base and your bowl will be all ready for you tomorrow! If you'd like to churn sooner than that, put it in an ice bath and refrigerate to bring the temperature down quickly. 3 8oz packages of cream cheese1-1/3 cups granulated sugar 3 TBSP cornstarch 2 TBSP eCreamery's Vanilla Bean Gourmet Flavoring 2 large eggs, at room temp 1/2 cup heavy whipping cream 4 TBSP eCreamery's Tiramisu Cappuccino Gourmet Flavoring Pans needed: 8 inch springform pan Another pan at least an inch deep and able to be used for creating a water bath around the springform pan. Directions: 1. Preheat your oven to 350 F. Butter or spray the sides of your springform pan and wrap the outsides with aluminum foil. For this we bring out the big dogs, two sheets of heavy duty aluminum foil. Make sure your foil goes all the way up the sides of your pan. 2. Mix 1 package (8oz) of cream cheese, 1/3 cup of sugar, and cornstarch in a mixing bowl and beat on low until creamy. This will take about 4 minutes and you should be scraping the sides often. Put in the rest of the cream cheese, one package at a time, scraping down the sides after each addition. 3. Increase the speed to medium and mix in the remaining sugar, eCreamery's Vanilla Bean Gourmet Flavoring and eCreamery's Tiramisu Cappuccino Gourmet Flavoring. Blend in eggs, one at a time, beating well after each one and continue to scrape down the sides often. Mix in cream just until incorporated, careful not to over mix. Pour batter gently over crust. 4. Place your springform pan onto the other pan. Place onto the middle rack and pour warm water in between both pans. Bake at 350 F for about 1 hour and 20 minutes or until the edges are golden & your cheesecake slightly jiggles. 5. When your cheesecake is done, take it out of the water bath and remove the foil. Let it cool for about 5 to 10 minutes and run a hot knife around the edges of your cake twice. This will help prevent cracking when it cools. Crust: 1 1/2 chocolate cookies (such as chocolate animal crackers) finely ground 1/3 cup granulated sugar 6 TBSP butter melted Preheat your oven to 350 & lightly spray the bottom of an 8 inch springform pan. Mix your chocolate cookies and your sugar in a bowl and then mix in the melted butter. Line the bottom of the springform with the crust smoothing out to make a consistent layer. 2 ½ cups all-purpose flour1 ½ cups sugar 1 teaspoon baking soda 1 teaspoon salt 1/8 cup of eCreamery's 3 Cocoa Bean Chocolate Gourmet Flavoring 1 ½ cups vegetable oil 1 cup buttermilk, room temperature 2 large eggs, room temperature 2 tablespoons red food coloring 1 teaspoon white distilled vinegar 1 teaspoon eCreamery's Vanilla Bean Gourmet Flavoring Directions: 1.Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers. 2. In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and eCreamery 3 Cocoa Bean Chocolate. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and eCreamery Vanilla Bean. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined. 3. Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting. Cream Cheese Frosting 1 pound cream cheese softened 2 sticks butter, softened 1 teaspoon eCreamery's Vanilla Bean Gourmet Flavoring 4 cups sifted confectioners’ sugar In a large mixing bowl, beat the cream cheese, butter and eCreamery Vanilla Bean together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy. Serve with your favorite eCreamery Gourmet Ice Cream or Gelato! Chocolate Ganache: Glaze or Frosting
8 oz bittersweet chocolate, chopped½ cup heavy cream 1 teaspoon eCreamery's Tiramisu Cappuccino Gourmet Flavoring Directions: 1. Place the chocolate and heavy cream in a bowl set over a pot of simmering water, stirring occasionally. 2. As the chocolate begins to melt add the eCreamery Tiramisu Cappuccino flavoring. 3. Continue to stir until the chocolate has completely melted. Remove from heat and glaze cupcakes by dipping them or glaze cake by pouring it over. Directions for Frosting: 4. Allow the mixture from above to cool to room temperature. 5. In the bowl of an electric mixer fitted with the whisk attachment, whisk the chocolate mixture on medium speed for a few minutes, until it's thickened. 6. Frost cupcakes or cake as usual with a spatula. |
